Alice Camellini
A Parma native through and through, she has gained valuable experience in the hospitality and mixology industry at some of the most notable establishments in the area.
She is a dedicated researcher and an esteemed scholar of cocktails, and she brings her expertise to the lounge bar at Palazzo Utini as Bar Manager, engaging guests in an immersive experience that showcases her original creations.

The Palazzo Utini Cocktail List
The Palazzo Utini cocktail list list offers insights into the history and architecture of the building from 1820 to the present day. It provides a sort of paradigmatic itinerary of the hotel’s rooms, from the entrance to the bar, and aims to capture the essence of each room in a cocktail. Each room exudes a unique charm, evoking the past while embracing the elegance of the present. The great classics are reinterpreted in a multifaceted and contemporary key, while the renewed design with clean and minimal lines enhances the historical architecture of the palace.

Malve & Ouverture
The Overture is dedicated to Marie Louise and represents the entrance, as a metaphor for a new beginning. Under the Grand Duchy the Municipality of Noceto was established and with it the history of our inn. The drink is inspired by the ancient rosoli sipped at court where herb louise and violet were the protagonists.
In the non-alcoholic version, Malve, a colour associated with Parma by Proust, is accompanied by an infusion of its flowers and an extract of wild berries, which may be served as tea in memory of the splendours of the Grand Duchy.

Shine and Rise
The hotel lobby, a welcoming and intimate space, inspired Shine and Rise, a marmalade cocktail, emblematic of a good morning in the name of sustainability.

Golden Sparkling
The bistrot is addressed by Golden Sparkling, a blend of two historical drinks that have perhaps been overlooked in the past. It has been reinterpreted in a modern key with gold leaf surmounted, which could be seen as an emblem of the Italian “Dolce Vita”.

Autarchico & Bevanda Arlecchina
From the meditative and courtly atmosphere of the lobby comes Autartico and Bevanda arlecchina (non-alcoholic version). Inspired by the Americano, which was elevated to the status of national drink by the Fascist Regime, a significant aspect of the building’s history, this drink pays homage to the use of territorial ingredients, which represent the building’s ideology and evolution over time, flavour and texture. It is a tribute to the polyhibits of futurism.

Immaginifico
The Immaginifico, the cocktail par excellence evocative of the rarefied atmospheres of luxury exclusive to the Grands of the past, his majesty the Martini! A dirty selfishly dedicated to me and my love for this iconic drink.

Mi-No
In honor of the gourmet restaurant, Mi-No (Milan – Noceto) a gastronomic cocktail, a reinterpretation in liquid form of the red beetroot risotto.

Ham
To conclude, a tribute to the Utini family and the love in bringing this historic residence back to its former glory. Ham, the embodiment of Parmesan excellence and symbol of the Utini family, which passionately hands down our tradition.

Rem
Rem, an acronym for night, sleep and dream, the quintessence of the rooms, with Cognac, pear and the inevitable chamomile.
Our proposal plays on around 20 cocktails between timeless classics and signature cocktails.
In the month of August we offer a preview of five of our esclusive cocktails.
